Bake buttery Air Fryer Cranberry Pistachio Shortbread Cookies with crisp edges, tender centers, tart cranberries, and crunchy pistachios. Perfect for holidays, gifting, or anytime you want a sweet treat.
Ingredients
1 1/2sticksbutter, cold and unsalted
1/2cupgranulated sugar
1teaspoonsalt
3cupsall-purpose flour
1tablespooncornstarch
3/4cupcranberries, dried
3/4cuppistachios, no shells
Instructions
Start by cutting the 1 1/2 sticks butter into small cubes. Set aside.
In a large bowl combine the 1/2 cup granulated sugar, 1 teaspoon salt, 3 cups all-purpose flour, and 1 tablespoon cornstarch. Add the butter cubes to the dry mixture.
Using a hand mixer, stand mixer, your hands or masher thoroughly combine all ingredients. Once it’s mixed well fold in dried 3/4 cup cranberries and 3/4 cup pistachios with a spatula.
Dough should be a little sticky. Cover bowl with plastic and refrigerate for two hours.
When you’re ready to bake remove from fridge.
Preheat air fryer to 300 degrees F, for 3-5 minutes.
After preheating, line basket with parchment. Roll cookies into small two inch round balls. Place on parchment paper.
Set cook time for 16-18 minutes or until they reach a nice golden brown color.
