Start by combing the 2 cups all-purpose flour, 1 cup granulated sugar, 1 1/2 teaspoons baking powder, 1 teaspoon ground nutmeg, 1/2 teaspoon ground cinnamon, 1/2 teaspoon baking soda, 1/2 teaspoon ground ginger and 1 teaspoon salt in a large mixing bowl.
Cut in the 1/2 cup vegetable shortening and blend until crumbly.
Mix in the 1/4 cup water, 1/2 cup lemon juice, 2 teaspoons grated orange peel zest, 2 large eggs and 1 tablespoon pure vanilla extract Beat well.
Mix well, then fold in the 1 1/2 cups cranberries.
Spray your muffin tins with non-stick cooking spray.
Fill your muffin tins, about 2/3’s full.
Set your air fryer to air fryer temperature of 350 degrees F, and the set the cook time for 12-15 minutes.
