Air Fryer Cinnamon Raisin French Toast

Description

Crisp outside, custardy inside, and ready in 15 minutes. Made with everyday cinnamon raisin bread — plus the trick that keeps the raisins from scorching.

Ingredients 

  • 6 slices cinnamon raisin bread, preferably day-old
  • 1 cup milk
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Cooking spray or butter, for the basket
  • Maple syrup, powdered sugar, and butter, for serving

Instructions

  • Preheat the air fryer to 350°F for 3 minutes.
  • Whisk the milk, eggs, flour, vanilla, cinnamon, and salt in a wide shallow bowl until completely smooth with no flour lumps.
  • Dip each slice of bread for 10 to 15 seconds per side. As you lift each slice, press any exposed raisins down into the surface of the bread so they don't scorch.
  • Lightly grease the basket or tray. Arrange the slices in a single layer with space between them — 2 slices in a 5.8-quart basket, 4 on a rack. Work in batches.
  • Cook at 350°F for 4 minutes. Flip each slice and cook 3 to 4 minutes more, until deep golden and springy to the touch with no wet custard at the edges.
  • Serve immediately with maple syrup, butter, and a dusting of powdered sugar.

Notes

  • Don't skip the preheat. It's the difference between crisp and soggy.
  • Don't crowd the basket. Air has to circulate around each slice.
  • If raisins scorch, drop to 325°F and add 2 minutes.
  • Parchment goes in with the food, never during the preheat — it will fly into the heating element.
  • Storage: Airtight in the fridge up to 3 days, or frozen up to 2 months. Reheat at 350°F for 3 minutes from the fridge, 5 to 6 from frozen.
