Description

This air fryer blueberry cottage cheese toast is the ultimate 10-minute, high-protein breakfast. Crisp sourdough or whole-grain bread is air-fried until golden, topped with creamy (or whipped) cottage cheese, then finished with fresh blueberries that get blistered and jammy in the air fryer. With 15+ grams of protein per slice, a hint of vanilla and cinnamon, and a drizzle of honey, every bite tastes like a warm slice of cheesecake. Naturally vegetarian, easily made gluten-free, and endlessly customizable.

Ingredients 

For the toast:

  • 2 slices sourdough bread, or whole grain / high-protein bread
  • 1 cup cottage cheese, full-fat or low-fat
  • ½ cup fresh blueberries

For flavor:

  • 1 teaspoon honey, or maple syrup, for drizzling
  • ½ teaspoon pure vanilla extract, optional
  • ½ teaspoon ground cinnamon, optional
  • ½ teaspoon flaky sea salt, optional, recommended
  • Lemon zest, chopped nuts, or fresh mint (optional, for garnish)

Instructions

  • Toast the bread. Place 2 slices of bread in the air fryer basket in a single layer. Air fry at 350°F (175°C) for 3–5 minutes, until deeply golden and crisp. Don't crowd the basket.
  • Prep the cottage cheese. While the bread toasts, stir 1 cup cottage cheese with vanilla and cinnamon in a small bowl. For a smooth, ricotta-like texture, blend in a food processor for 20–30 seconds.
  • Assemble. Spread the cottage cheese mixture generously over the warm toast. Top with fresh blueberries and drizzle with honey or maple syrup.
  • Blister the berries (recommended). Return the topped toast to the air fryer for 1–2 minutes at 350°F, until the blueberries soften and begin to burst.
  • Finish. Top with a pinch of flaky salt, optional nuts or mint, and serve immediately.

Notes

  • For crispier toast: Aim for deep golden brown — pale toast gets soggy under cottage cheese.
  • For higher protein: Use Dave's Killer Bread Protein, Ezekiel, or any high-protein bread to push the total to 20+ grams of protein per slice.
  • For low-carb / keto: Use cloud bread or a low-carb bread; swap honey for sugar-free maple syrup.
  • For gluten-free: Use any gluten-free bread; rest of the recipe is naturally GF.
  • Frozen blueberries: Thaw and pat dry before using — otherwise they release too much liquid.
  • Make-ahead: Mix the cottage cheese with vanilla and cinnamon up to 3 days ahead. Toast and assemble fresh.
