Prepare air fryer basket by lining with parchment paper. Preheat air fryer to 375 degrees, if manufacturer’s instructions call for preheating the appliance.
Remove bacon from package and separate strips into two equal groups of strips. Usually this is either five or six slices a piece.
Using a pair of kitchen shears or scissors, cut one set of the bacon strips in half.
Lay the longer strips out neatly in rows on a clean surface (or a piece of parchment paper that can fit into the air fryer basket) and create a basket weave with the shorter bacon strips, interlacing the bacon strips, and alternating between slices (see images for examples).
Do this for all of the bacon until you have a complete bacon “quilt” of sorts. Place the bacon (or the parchment) into the air fryer basket and place the air fryer basket into the air fryer.
Cook for 14 – 16 minutes, or until bacon is cooked through, but not overly crispy.
Carefully lift air fryer basket and tilt to remove grease from bottom of basket.
Remove air fryer basket from air fryer and set aside on heatproof surface to cool for at least 5 minutes, before removing bacon.
Once bacon has cooled sufficiently to work with, coat liberally with mayo using soft spatula. Top with lettuce and tomato.
Roll bacon up tightly lengthwise, creating a sushi-like “roll” out of the bacon, lettuce and tomato. Use the optional toothpicks to secure the bacon “roll” if necessary to preserve the “sushi roll” shape.
Use an extremely sharp knife to cut the “sushi-roll” into slices for serving.
Serve immediately.
