This simple Air Fryer Blackberry Cobbler is a delightful summer treat, but I enjoy it year-round with frozen berries. The biscuit topping is wonderfully buttery and sweet, and it’s even better with a scoop of vanilla ice cream on top!
Ingredients
4tablespoonsbutter, unsalted
3/4cupself-rising flour
1/4cupgranulated sugar
1/2teaspoonkosher salt
1tablespoonlemon zest
1/2cuplemon-lime soda, like Mountain Dew
6ouncesblackberries, about 1 1/2 cups
Instructions
Place the butter in your baking pan and place it in the air fryer. Preheat the air fryer to 320°F, air fryer setting, and let the butter melt for 2-3 minutes while the air fryer is preheating.
In a medium bowl, whisk the flour, sugar, salt, and lemon zest. Add the melted butter and lemon-lime soda.
Whisk until all of the flour is incorporated. A few lumps are fine.
Pour the batter into your prepared pan and top with the blackberries. Cover the pan with foil and place it in the air fryer. Bake in the air fryer for 20 minutes or until the cobbler starts to puff and start to look cooked around the edges. The center will not be fully cooked.
Remove the foil and cook for 15 more minutes or until the cobbler is golden brown and fully cooked in the center. A toothpick inserted in the center should come out clean. Let the cobbler cool for 5-10 minutes before serving.
