Air Fryer Beef Enchiladas

Description

This is my favorite beef been enchilada recipe. They are so easy to make in the air fryer and you can add anything you want to make it a very special dinner, for the entire family. Today, I give you my favorite, Air Fryer Beef Enchiladas Recipe.

Ingredients 

  • 1 pound ground beef, lean
  • 1 package taco seasoning
  • 8 tortillas, corn or flour
  • 1 cup black beans
  • 1 cup tomatoes, diced with green chiles
  • 1/2 cup Mexican cheese 
  • 2 cups enchilada sauce

Optional Toppings: Sour Cream, cilantro, sliced avocados, etc.

Instructions

  • Start by using a skillet and browning your meat, add the taco seasoning, and cook per the package instructions.
  • Drain the meat, of any fat.
  • Then add your browned ground meat to a large mixing bowl, add in the diced tomatoes, and black beans. Mix well.
  • Add some filling to the tortilla. Then top with the shredded cheese.
  • Roll the tortilla up and place it into the air fryer basket.
  • Brush on the enchilada sauce.
  • Set the temperature to 350 degrees F, for about 5 to 8 minutes.
  • Let cool slightly, before serving.
  • Add your favorite toppings, and enjoy!
