Description

Air Fryer Beef and Bean Taquitos made crispy, golden, and packed with seasoned beef, refried beans, and melted cheese. A quick, easy snack or dinner the whole family will love.

Ingredients 

  • 1 pound ground beef, 80/20 recommended
  • 2 tablespoons taco seasoning
  • 3 tablespoons water
  • ½ cup refried beans
  • ½ cup Mexican cheese blend, shredded
  • 8 small corn tortillas, street-taco size
  • Toppings, optional: sour cream, queso, salsa, diced tomatoes, sliced green onions, sliced black olives, shredded cheese,

Instructions

  • Brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Drain excess fat.
  • Add the taco seasoning and 2–3 tablespoons of water. Stir and cook for 2 more minutes until the sauce thickens.
  • Remove from heat. Stir in the refried beans and shredded cheese until fully combined. Let cool for 5 minutes.
  • Warm the tortillas: Wrap corn tortillas in a damp paper towel and microwave for 30–45 seconds until warm and pliable. Do not skip this step — dry tortillas will crack when rolled.
  • Place 2–3 tablespoons of filling along one edge of each tortilla. Roll tightly and place seam-side down in the air fryer basket.
  • Spray taquitos generously with olive oil cooking spray. Air fry at 340°F for 4 minutes.
  • Flip taquitos, spray again with olive oil, and cook for another 4 minutes until golden and crispy.
  • Serve immediately with your choice of toppings.
