Place each chicken breast on a cutting board and slice horizontally, but not all the way through, to create a pocket for the filling. Season the inside of the chicken breasts with salt, pepper, and Italian seasoning.
Spoon the vegetable and cheese mixture into the pocket of each chicken breast, filling them generously but not overstuffed.
Use toothpicks to secure the openings of the chicken breasts and keep the filling inside during cooking. Brush the top of the vegetables with olive oil, and season with salt, pepper, and Italian seasoning.
Place the stuffed chicken breasts in the air fryer basket in a single layer, making sure they are not overcrowded. Set air fryer temperature to 370 degrees F, and set the cook time for 10-12 minutes, flipping halfway through, or until the chicken is cooked through and the filling is bubbly and golden.
The chicken is finished cooking when the internal temperature of the chicken is 165 degrees F.
For added flavor, sprinkle mozzarella cheese on top. There is no need to turn the air fryer on, as the residual heat will melt the cheese.
Once cooked, carefully remove the toothpicks from the chicken breasts. Serve the Primavera Stuffed Chicken hot, garnished with fresh herbs if desired. Enjoy your flavorful and nutritious meal straight from the air fryer!
