Ingredients 

  • 1 small eggplant, cut into 1/2-inch slices
  • 2 small zucchinis, cut into 1/2-inch slices
  • 1 bell pepper, any color, sliced
  • 1 medium onion, sliced
  • 2 tomatoes, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 2 cloves garlic, minced

Instructions

  • Prep the Vegetables: Toss the eggplant, zucchinis, bell pepper, onion, and tomatoes with olive oil, dried thyme, minced garlic, salt, and pepper in a large bowl until all the pieces are well coated.
