Ingredients 

  • 1 pound Ground Pork Sausage
  • 1/4 cup Green Onions
  • 1/4 cup White Onions
  • 1/4 cup Carrots, Minced
  • 1/4 cup Water Chestnuts, Diced
  • 2 tablespoons Minced Garlic
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Ground Ginger
  • 2 tablespoons Cilantro
  • 12 Spring Roll Wrappers, or Egg Roll Wrappers

Instructions

  • Prepare the Lumpia Filling: In a large skillet over medium-high heat, cook the ground pork sausage until browned and crumbled. Add minced garlic and continue to cook for another minute until fragrant. Stir in green onions, white onions, minced carrots, diced water chestnuts, soy sauce, salt, and ground ginger. Cook for about 5-7 minutes until the vegetables are tender and the filling is well combined. Remove from heat, stir in fresh cilantro, and let the filling cool.
  • Assemble the Lumpia: Lay out a spring or egg roll wrapper with one corner pointing toward you (forming a diamond shape). Place a spoonful of the prepared filling near the corner closest to you. Fold that corner over the filling, then fold in the sides, and roll up tightly. Use a dab of water or a flour-water paste to seal the edges of the wrapper. Repeat this process until all the filling is used.
  • Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure it's hot and ready for cooking.
  • Lightly Coat with Oil: Lightly spray or brush the lumpia rolls with olive oil. This helps achieve a crispy, golden exterior during air frying.
  • Air Fry the Lumpia: Place the lumpia rolls in a single layer in the air fryer basket, making sure they aren't touching. You may need to cook them in batches depending on the size of your air fryer. Cook for approximately 8-10 minutes, turning them halfway through the cooking time. The lumpia should be golden brown and crispy when done.
