Description

Air Fryer Chicken, Broccoli, and Bell Pepper -- Chicken, broccoli, and bell peppers are all healthy ingredients that You can easily cook in an air fryer. It is about half the time it takes to cook them in a traditional oven or stovetop. This makes for a great mid-week meal!

Ingredients 

  • 4 chicken thighs, 7.05 oz - 10.58 oz (200 - 300 g) each, bone-in, skin on
  • 1 medium red bell pepper, sliced
  • 1 cup broccoli, 3.52 oz | 100 g, defrost and drain
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 2 garlic cloves, peeled and chopped
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon Kosher salt, to taste
  • 1/4 teaspoon black pepper, to taste

Instructions

  • Preheat the air fryer to 320 F | 160 C and place a reusable silicone liner in the basket.
  • Wash and pat dry chicken thighs.
  • In a large bowl, add chicken thighs with bell pepper and broccoli. Season with oregano, parsley, thyme, garlic, oil, salt, and pepper. Cover with a foil and marinate for about 10 minutes while the air fryer is heating.
  • Remove foil and transfer all the chicken with vegetables in the basket.
  • Place in the air fryer basket and fry for 25 minutes.
  • Allow the chicken to rest for 5-10 minutes before serving.
  • Serve with mashed potato and garnish with parsley.
  • Plate, serve, and enjoy!
