Ingredients 

  • whole chicken, about 4-5 pounds
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon cayenne pepper, optional

Instructions

  • Preheat oven to 375 degrees F (190°C).
  • Remove any giblets from the chicken and pat dry with paper towels.
  • In a small bowl, mix together salt, black pepper, paprika, onion powder, garlic powder, thyme, oregano, rosemary, and cayenne pepper.
  • Rub the outside and inside of the chicken with olive oil.
  • Apply the seasoning mix evenly over the chicken, including under the skin and inside the cavity.
  • Tie the legs together with kitchen twine and tuck the wing tips under the body.
  • Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Carve the chicken and serve it warm.
