Description

Air Fryer Jalapeno Corn Muffins --- I know that moms are always looking for new recipes to make with their kids. I am here today to share one of my favorite recipe creations- Air fryer Jalapeno Corn Muffins.

Ingredients 

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup melted butter, unsalted
  • 2 tablespoons vegetable oil
  • 1/3 cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 2 sliced jalapeno peppers

Instructions

  • In a large mixing bowl, mix the dry ingredients, the cornmeal, flour, baking powder, baking soda, and salt. In another, both mix the butter, vegetable oil, brown sugar, honey, eggs, and buttermilk. Mix well. Fold the dry ingredients into the wet ingredients.
  • Slowly fold the jalapeno peppers into the batter.
  • Either grease your muffin tins or place a liner into them. Fill them about 2/3 the way full. Set the muffin tin into the air fryer basket, and set the temperature to 320 degrees F, air fryer setting for 10-12 minutes.
  • Insert a toothpick into the center of the Air Fryer Jalapeno Corn Muffins. If it comes out clean, remove it from the Air Fryer.
  • Let cool slightly before serving.
  • Plate, serve, and enjoy!
