Ingredients 

  • 1 whole pineapple
  • 2-3 tablespoons cooking oil
  • 2 tablespoons brown sugar, optional
  • 1 teaspoon ground cinnamon, optional
  • 1/4 teaspoon kosher salt, optional
  • 1/4 teaspoon lime zest, optional
  • 1/4 teaspoon lemon zest, optional

Instructions

  • Begin by trimming off the top and bottom of the pineapple. Stand it upright and slice down the sides to remove the skin. Ensure all the brown eyes are removed.
  • Slice the pineapple into rounds or wedges, depending on your preference. If you're using rounds, you can either leave the core in for presentation and remove it while eating or core each round using a small cookie cutter or knife.
  • Heat your Blackstone griddle to medium-high heat.
  • In a bowl, combine melted butter or oil with optional ingredients like brown sugar and cinnamon. Mix well.
  • Brush each pineapple slice or wedge generously on both sides with the mixture.
  • Once the griddle is hot, place the pineapple slices onto the surface.
  • Cook for about 3-4 minutes on each side or until you see a nice caramelization and griddle marks on the pineapple slices. The exact time can vary based on the heat and thickness of the slices.
  • Once perfectly caramelized, remove the pineapple slices from the griddle.
  • For a refreshing twist, sprinkle some lime or lemon zest on top. You can also garnish with fresh mint leaves for added color and flavor.
  • Serve immediately while still warm. It pairs perfectly with vanilla ice cream, as a side for grilled meats, or even on its own!
