Description

Air Fryer Potato Salad -- Are you looking for a delicious, healthy twist on your traditional potato salad? If so, why not give an air fryer potato salad a try?

Ingredients 

  • 2 pounds baby potatoes, Red, white, or Yukon Gold
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon black pepper

Dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped fresh dill, Or parsley:
  • 2 stalks green onions, thinly sliced
  • 1/4 cup red onion, ced
  • 1/4 cup celery
  • 1/4 cup dill pickles , ced

Instructions

  • Preheat the air fryer to 400 degrees F (200°C) for a few minutes. In a large mixing bowl or Ziploc bag, combine the halved baby potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated with the seasonings.
  • Place the seasoned potatoes in a single layer in the air fryer basket. Air fry the potatoes at 400 degrees F (200°C) for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even cooking. The potatoes should be golden brown and fork-tender when done.
  • Once the potatoes are cooked, remove them from the air fryer and let them cool slightly.
  • Add the cooled potatoes to a large bowl and the mayonnaise, Dijon mustard, dill (or parsley), green onions, red onions, celery, and dill pickles—season with salt and black pepper to taste. Refrigerate until serving.
