6ouncescream cheese, room temperature
1/4cupbutter, unsalted, melted
6largeeggs
1cupmilk
1 1/2cupsall-purpose flour
1/2cupcornmeal
1teaspoonbaking powder
1teaspoonkosher salt
15 1/4ounceswhole kernel corn, drained
1/2cupsalsa
1/4cupgreen onions, sliced

Instructions
Add the cream cheese and butter to a large mixing bowl, using a hand mixer, and mix until smooth. Slowly fold in the eggs and milk. Add flour, cornmeal, baking powder, and salt in another large bowl. Slowly fold the dry ingredients into the wet ingredients and mix well. Fold in the drained whole corn kernels, salsa, and sliced green onions.
Set the Blackstone griddle to medium heat, grease your Blackstone griddle, and then add 1/4 cup of batter in a single layer; set the cooking time for 5 minutes, flip the then bubbles on top, and then flip until the bottom is golden brown.
Serve with a drizzle of lime juice, sour cream, and a drizzle of green onion!
