Blackstone Griddle Corn Cakes -- Are you longing for something new that’s easy and delicious? Look no further! Our Blackstone Griddle Corn Cakes are the perfect choice for a satisfying meal that can be prepared in minutes.

Ingredients 

  • 6 ounces cream cheese, room temperature
  • 1/4 cup butter, unsalted, melted
  • 6 large eggs
  • 1 cup milk
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 15 1/4 ounces whole kernel corn, drained
  • 1/2 cup salsa
  • 1/4 cup green onions, sliced

Serving: Sour Cream and Salsa

    Instructions

    • Add the cream cheese and butter to a large mixing bowl, using a hand mixer, and mix until smooth. Slowly fold in the eggs and milk. Add flour, cornmeal, baking powder, and salt in another large bowl. Slowly fold the dry ingredients into the wet ingredients and mix well. Fold in the drained whole corn kernels, salsa, and sliced green onions.
    • Set the Blackstone griddle to medium heat, grease your Blackstone griddle, and then add 1/4 cup of batter in a single layer; set the cooking time for 5 minutes, flip the then bubbles on top, and then flip until the bottom is golden brown.
    • Serve with a drizzle of lime juice, sour cream, and a drizzle of green onion!
