Season the chicken pieces with salt and pepper, then toss them in cornstarch until fully coated. Shake off any excess.

While the chicken is cooking, prepare the sauce. Combine the soy sauce, honey, ketchup, and minced garlic in a small saucepan over medium heat, stirring until the honey and ketchup dissolve.
In a small bowl, mix together the cornstarch and water, then add to the saucepan. Bring the mixture to a boil, reduce the heat, and let it simmer until the sauce thickens. Stir in the sesame oil.
Once the chicken is done, place it in a large bowl. Pour the sauce over the chicken and toss until all pieces are evenly coated.
Sprinkle with sesame seeds and sliced green onions for garnish.
