1.5-2poundsboneless, skinless chicken breast
1cupBBQ sauce
1/2cupchicken broth or water
2tablespoonsapple cider vinegar
1tablespoonhoney
1teaspoonsmoked paprika
1teaspoongarlic powder
1teaspoononion powder
1teaspoonkosher salt
1/2teaspoonblack pepper
Instructions
Season the boneless skinless chicken breasts with salt, pepper, smoked paprika, garlic powder, and onion powder.
Pour the chicken broth or water into the bottom of the pot and place the chicken breasts in a single layer on top. Whisk together the BBQ sauce, apple cider vinegar, and honey in a separate bowl until well combined.
Pour the BBQ sauce mixture over the chicken, making sure that the chicken is coated on all sides. Close the Instant Pot lid and set the valve to the "sealing position." Select the "manual" or "pressure cook" function and set the cook time for 15 minutes on high pressure. Once the cooking time is complete, allow the pressure to release naturally for 10-15 minutes. Then, carefully switch the valve to "venting" to release any remaining pressure for a quick release.
Open the Instant Pot lid and remove the chicken breasts from the pot. Using two forks, shred the chicken into small pieces. Return the shredded chicken to the Instant Pot and stir to coat it with the BBQ sauce. Serve the pulled BBQ chicken hot, garnished with chopped fresh parsley or cilantro if desired.
