Description

This is a great and easy recipe. I made it today in the Instant Pot and just sauteed some meat to go along with it. It’s a full meal and a really comforting one. This is the perfect dish for the fall. Today, my favorite recipe for Instant Pot Cajun Chicken Pasta.

Ingredients 

  • 1 pound penne pasta
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, sliced
  • 1 sliced poblano pepper
  • 1/4 cup tomato, diced
  • 1 tablespoon Creole seasoning, or Cajun seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup Monterey Jack Shredded Cheese
  • 8 tablespoons cream cheese

Instructions

Simple Chicken Directions:

  • Add olive oil, chicken, pepper, diced tomato, blackening seasoning, salt, and black pepper in a large skillet.
  • Cook the chicken until fully cooked, about 6 to 8 minutes, stirring constantly.

Simple Pasta Directions:

  • In your Instant Pot, add the penne and water.
  • Set manual high pressure for 4 minutes, making sure that the vent is sealed. When the time is done, do a quick release.
  • Drain, reserving about 1/4 cup of pasta water.
  • Mix in the shredded cheese, cream cheese, and reserved water, and mix well.
  • Add the blackened chicken, diced tomatoes, and poblano peppers (cooked as directed below)
  • Plate, serve, and enjoy!
