Description

Are you looking for an easy and healthy way to get that fried potato fix? Look no further! With the help of an air fryer, you can have perfectly cooked, crunchy potatoes in just minutes.

Ingredients 

  • 1 pound Yukon gold potatoes, small
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon parsley, diced
  • 2 teaspoons kosher salt, or sea salt
  • 1 teaspoon black pepper

Instructions

  • Preheat the air fryer to 400 degrees F for 3-5 minutes using the air fryer setting. Depending on the air fryer, different air fryers have a preheat button. 
  • Wash your potatoes and dry them with paper towels or a kitchen towel; cut them in half, or use a mandoline slicer and add them to a large bowl. Keep the skin on.
  • Combine oil, and minced garlic,  in a small bowl. Whisk, then pour into the bowl with potatoes. Add salt, parmesan, and black pepper. Toss to coat.
  • Place the seasoned potatoes in the air fryer basket, cut side down, single layer,  and set cook time for 10-15 minutes; stop the halfway mark through and shake the basket to redistribute the potatoes.
  • Garnish with fresh herbs, and enjoy!
