1poundYukon gold potatoes, small
3clovesgarlic, minced
1/4cupolive oil
1cupParmesan cheese, grated
1tablespoonparsley, diced
2teaspoonskosher salt, or sea salt
1teaspoonblack pepper
Instructions
Preheat the air fryer to 400 degrees F for 3-5 minutes using the air fryer setting. Depending on the air fryer, different air fryers have a preheat button.
Wash your potatoes and dry them with paper towels or a kitchen towel; cut them in half, or use a mandoline slicer and add them to a large bowl. Keep the skin on.
Combine oil, and minced garlic, in a small bowl. Whisk, then pour into the bowl with potatoes. Add salt, parmesan, and black pepper. Toss to coat.
Place the seasoned potatoes in the air fryer basket, cut side down, single layer, and set cook time for 10-15 minutes; stop the halfway mark through and shake the basket to redistribute the potatoes.
