Air Fryer Lemon Blueberry Bundt Pound Cake

Description

This is such an easy cake to make in the air fryer. The blueberries give this cake a great flavor. I love blueberries in baked goods. I usually add a smear of cream cheese on top and pair it with a hot cup of coffee. This makes an excellent breakfast or dessert.

Ingredients 

Lemon Blueberry Bundt Pound Cake:

  • 1/2 cup butter, room temperature
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries

Icing:

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice

Instructions

  • In a large mixing bowl, cream the sugar and butter together.
  • Mix in the eggs.
  • Add the flour, baking soda, salt, lemon zest, and mix well.
  • Add the milk and lemon juice.
  • Fold in the blueberries.
  • Spray your bundt pan generously with olive oil.
  • Pour the prepared batter into the prepared pan
  • Set in the air fryer and set the temperature to 330 degrees F, air fryer setting, for 20-25 minutes.
  • Check and make sure the cake is fully cooked. The exact time will depend on your air fryer and the pan you use.
  • When the cake is cooled, drizzle on the icing.
  • Plate, serve, and enjoy!

Notes

To make the icing: Mix together in a small bowl the powdered sugar and milk. Mix until it's the consistency of glue, then pour over the slightly cool cake.
