Start by rolling the dough out. Ensure that you dusted flour on the surface; otherwise, you will end up with a sticky mess.
Use your biscuit cutter and make your circles. Choose a size that will allow you to put in a few tablespoons of filling.
Remove the excess dough from the counter, and set it aside (as you will roll that later to make more hand pies)
Use a spoon and scoop some filling in. The first one is the hardest, as you will need to experiment with how much filling to use, depending on your circle’s size. I used 2 tablespoons per hand pie.
Use a fork ends and crimp the edges, all around making sure that the seal is tight. In a small bowl, mix the egg white and water and beat until it’s well combined.
Place the hand pies into the Air Fryer, and use a pastry brush to brush the tops, which will give it a nice golden color.
Set the temperature to 350 degrees F, air fryer setting, for 8 minutes, flipping halfway during the cooking process.
Plate, serve, and enjoy!
