Description

Air Fryer Roasted Asparagus & New Potatoes--Asparagus and new potatoes are two of my favorite spring vegetables. And, if you want to make them even more delicious, try roasting the asparagus spears right along with the potatoes. You'll be amazed at how much flavor is added by this quick-cooking technique!

Ingredients 

  • 1 pound asparagus
  • 2 stalks scallions
  • 2-4 New Potatoes
  • 1 teaspoon dill
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  • Start by cutting your potatoes and then put them in a small saucepan, cover them with water and simmer until fork-tender. Then drain.
  • Chop your asparagus into about 2-inch pieces. (Cut the ends off, and discard) Chop the whites of the scallions into about 1/2 inch pieces.
  • Add the asparagus and scallions to a small mixing bowl, and then add the olive oil and coat them. Please place them in the air fryer for 5 minutes at 350 degrees F (air fryer setting)
  • In a large mixing bowl, add the drained potatoes, roasted asparagus, and scallions, mix in 2 tablespoons of olive oil, dill spice, salt, and pepper. Mix well.
  • Plate, serve and enjoy!
