Air Fryer Blueberry Pie Bars

Description

Today, I reached for one of my mother’s favorite recipes and adapted it for the air fryer with the kids' home. It’s a great dessert, and I usually bring it to holiday parties and get-togethers. It is really kid-friendly and a great snack to share.

Ingredients 

  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour, all-purpose
  • 1 teaspoon baking powder
  • 21 ounces blueberry pie filling

Instructions

  • In a large mixing bowl, cream the butter and sugar together.
  • The mix in the eggs.
  • Then add the vanilla, flour, baking powder and mix well.
  • Mix until everything is well blended.
  • Spray an air fryer-safe pan (if it’s oven safe it’s generally air fryer safe) with olive oil spray. Choose a pan that is not too thick, otherwise, you will have a hard time with the bottom cooking.
  • Use about 3/4’s of the dough for the bottom layer, spread it out. So, you get a thin crust.
  • Spread the blueberry pie filling over the top.
  • Scatter the dough over the pie,
  • Set in the air fryer oven or basket and set the time for 10 minutes at 320 degrees F, and then set the temperature to 300 degrees F, for another 10 minutes.
  • Let cool bore slicing into bars.
  • Plate, serve, and enjoy!
