Air Fryer Raspberry Pie Bars

Description

This is such an easy treat for the kids and family. They are great in the air fryer, as they really get really crisp but stay really moist in the center. Today, I used up a carton of fresh raspberries, but frozen raspberries would work as well.

Ingredients 

Crumb Bars:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup shortening
  • 2 large eggs

Raspberry Filling:

  • 1/2 cup granulated sugar
  • 4 cups raspberries, fresh or frozen
  • 1 tablespoon cornstarch

Instructions

  • In a small bowl, mix the flour, sugar, baking powder, and salt.
  • Then mix in the shortening, and continue to mix until it’s crumbly.
  • Then add the eggs.
  • Press the crumb layer on the bottom of a greased pan.
  • In a small bowl, mix the sugar, raspberries (either fresh or frozen), and cornstarch. Mix well, spread it out onto the crumble layer, and then sprinkle the rest of the crumb topping on top of the raspberry filling.
  • Place the dessert into the air fryer, 320 degrees F (air fryer setting) for the first 10 minutes and then another 10 minutes at 300 degrees F, air fryer setting.
  • Let cool slightly before serving.
  • Plate, serve, and enjoy!
