Description

Ingredients 

Pie Crust: Omit if using pre-made pie crust

  • 1/2 cup all-purpose flour
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 tablespoons butter, cold, and cubed
  • 1-2 tablespoons water, ice cold

Pumpkin Pie Filling:

  • 1/4 cup pumpkin puree
  • 1/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 large egg, whisked
  • 1/4 cup heavy cream

Instructions

  • In a bowl, mix together, flour, sugar and salt. Rub in butter. Slowly add in water, tablespoon at a time, and knead until a smooth, stiff dough is formed. Wrap in plastic wrap, and place in fridge to chill for 15 minutes.
  • Preheat the air fryer to 300˚F.
  • Once chilled, take the pastry dough out of the fridge and divide it in half. Roll each ball out into a large circle and then place it into pie tins, cutting off any overhang. Place a foil over the pie crust, then fill it with pie weights or rice.
  • Cook in the air fryer for 10 minutes, then remove foil and weights and prick pie crusts a few times with a fork. Cook for another 5 minutes.
  • Meanwhile, make the pumpkin pie filling by mixing all the filling ingredients in a bowl.
  • Pour the pumpkin pie filling into the pre-baked pie crusts, making sure not to overfill.
  • Increase the temperature of the air fryer to 350˚F, then bakes the pie for 10 minutes, or until the filling has set and is no longer jiggly. Cover with foil if browning too quickly.
  • Remove pies from the air fryer and allow them to cool to room temperature. Place in fridge to set for 2 hours before serving. Serve with whipped cream or Ice cream.
