Description

Air Fryer Double Chocolate Muffins -- If you've ever been in the kitchen with your kids, then you know that it can get noisy. You're trying to bake muffins for a school party while they are shouting "look at me!" and getting into everything. It's hard to be patient when you're cooking with children! I'm here to tell you about my solution: air fryer double chocolate muffins.

Ingredients 

  • 6 ounces semisweet squares
  • 1/3 cup butter
  • 3/4 cup buttermilk
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 2/3 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup mini semi-sweet chocolate chips

Instructions

  • Start by melting the butter and chocolate squares in the microwave.
  • Mix in the egg, buttermilk, sugar, egg, vanilla, and mix well.
  • Then mix in the flour, baking soda, and salt.
  • Once the mixture is all mixed, fold in the chocolate chips.
  • Spray your muffin tin with non-stick cooking spray.
  • Spoon in the batter. Then place the muffin tin into the air fryer basket or tray and set the temperature to 320 degrees F, air fryer setting, for 10 to 12 minutes.
  • Place a toothpick through the middle of the muffin, and if it comes out clean, it’s cooked through; if not, add another 1-2 minutes.
  • Plate, serve and enjoy!

Notes

PRO TIPS:

  • For best results, use a great brand of chocolate squares and chocolate chips. I would recommend Ghiradelli Chocolate Squares.
  • Do not over mix the muffin batter. Otherwise, you will end up with dense muffins. Once all of the ingredients are combined, stop mixing.
  • If you want to add even more layers of flavors, you can add a tablespoon to 2 tablespoons o coffee into the batter.
  • Since every air fryer cooks slightly differently, check on the muffins frequently during the cooking process.
  • For best results, use a muffin tin rather than silicone muffin liners.
