Heat a skillet or frying pan over low to medium-high heat. While the pan heats combine eggs, whole milk, and salt and pepper in a medium mixing bowl. Mix well, until the ingredients are well combined.
Pour the eggs into the skillet (frying pan) and scramble for about 1-2 minutes. Next, add the chopped (cooked) sausage links, or ground sausage, and continue to scramble the eggs. Once the eggs are cooked, fold in the cheese and cook until melted.
Roll out the puff pastry sheet onto a lightly floured wooden cutting board. Use a pizza cutter, or sharp knife, and cut 6 equal rectangular sections. Repeat with the second puff pastry sheet.
Preheat the air fryer to 375° for 4-6 minutes. Add 1/4 cup of the scrambled eggs and sausage to the center of each puff pastry round. Leave a fingertip width worth of space between the filling and the edges. ** add water to a ramekin and dip your finger and trace along the edge of the dough sheet to help the pastry to stay sealed** Lay the second sheet of puff pastry over the eggs. Gently press down along the edges with your fingertip, then repeat with a fork to seal the edges.
Brush puff pastry with melted butter and sprinkle with everything bagel seasoning. Add toaster strudels to the air fryer basket in a single layer. Cook for 6-7 minutes, or until the dough is golden and crispy.
