Ingredients 

  • 1 cup unsweetened pineapple juice
  • 1/4 cup ketchup
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 2 teaspoons minced garlic
  • 1 tablespoon ginger, grated
  • 1 pound boneless, skinless chicken breast
  • 1 teaspoon olive oil
  • 1 large pineapple, slice into rings, and cut in half (semi-circles)

Serve with sliced green onions and fresh parsley

    Instructions

    • Add the pineapple juice, ketchup, soy sauce, brown sugar, garlic, and ginger to a large mixing bowl. Mix well until well combined.
    • Pour the marinade into a large bowl, add your chicken, and cover and refrigerator for about 2 hours
    • Preheat your air fryer to 360 degrees F, brush the olive oil over the air fryer basket, and set the chicken into the air fryer. Set the time for 12 to 15 minutes, or until the chicken’s internal temperature reaches 165 degrees F.
    • Toss the pineapples with a teaspoon of olive oil, just enough to coat the pineapple.
    • During the last 4 minutes of cooking, add the pineapples to the chicken's air fry the chicken and pineapple with sliced green onions right before serving.
