Ingredients 

Cookies:

  • 1 1/2 cups butter, room temperature
  • 2 1/2 cups white granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup white granulated sugar

Icing:

  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 4 teaspoons milk

Instructions

Cookies:

  • Cream together butter and sugar until smooth.
  • Beat in eggs and vanilla.
  • Stir in flour, baking powder, and salt.
  • Cover and chill for at least one hour or overnight.
  • Roll out chilled cookie dough using sugar for dusting to prevent sticking. This gives a better flavor to sugar cookies than using a dusting of flour.
  • Cut with cookie cutters and layout of a greased air fryer tray. Or an air fryer basket lined with cookie parchment paper.
  • Bake at 320 degrees F, air fryer setting, for 4 to 6 minutes until the edges are golden and the center is still soft.
  • Allow cooling before frosting as desired fully.

Icing Directions:

  • In a medium mixing bowl, mix sugar and vanilla. Slowly add milk in one teaspoon at a time, mixing until you have no lumps.
  • Test that your icing is right by drizzling lines in the bowl. If they take a moment to sink back in, your mixture is perfect. If it sinks in right away, add a bit more powdered sugar to stiffen it up a bit.

Notes

If you want to bake these cookies: Place the cookies on a greased cookie sheet. Bake at 400 for 6 to 8 minutes until the edges are golden and the center is still soft.
