Shortbread cookies are a classic holiday cookie. They're simple to make and always taste delicious. This recipe for Air Fryer Cranberry Pistachio Shortbread Cookies is a fun twist on the traditional recipe. The air fryer gives the cookies a crispy texture, and the cranberry and pistachio flavors pair perfectly together. These cookies are sure to be a hit at your next holiday gathering!

Ingredients 

  • 1 1/2 sticks butter, cold and unsalted
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 3/4 cup cranberries, dried
  • 3/4 cup pistachios, no shells

Instructions

  • Start by cutting the butter into small cubes. Set aside.
  • Next, in a large bowl combine the sugar, salt, flour, and cornstarch.
  • Add the butter cubes to the dry mixture.
  • Using a hand mixer, stand mixer, your hands or  masher thoroughly combine all ingredients. Once it’s mixed well fold in dried cranberries and pistachios with a spatula.
  • Dough should be a little sticky. Cover bowl with plastic and refrigerate for two hours.
  • When you’re ready to bake remove from fridge.
  • Preheat air fryer to 300 degrees F.
  • Line basket with parchment. Roll cookies into small two inch round balls. Place on parchment paper.
  • Air fry for about 16-18 minutes or until they reach a nice golden brown color.
  • Remove and cool on the wire rack.
