Ingredients 

Cupcake Ingredients:

  • 15.25 ounces white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3.3 ounce white chocolate pudding
  • 3 large egg whites
  • 1/2 cup Andes Candy Peppermint Bark or Ghirardelli Peppermint Bark Chocolate Squares, crushed or chopped 

Frosting Ingredients:

  • 1 1/2 stick butter, salted, room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/3 cup cocoa powder
  • 1/4 cup chocolate syrup
  • 4 cups powdered sugar
  • 3 tablespoons milk, cream, or half and half
  • 12 large Andes Chocolate Peppermint Candy or Ghirardelli Peppermint Bark Chocolate Squares, cut in half

Instructions

Directions for Cupcakes:

  • Spray or line a muffin tin.
  • Add cake mix to a large mixing bowl. Using an electric hand or stand mixer, mix in your water, oil, and eggs on medium speed until well incorporated. 
  • Fold in ½ cup of the chopped candies
  • Add batter into the muffin tin until each is about 2/3 full. Set the muffin tin into the air fryer, at 320 degrees F, using the air fryer setting, and bake for 10 to 12 minutes, or until a toothpick comes out clean. Allow cooling completely before frosting. 

Directions For Frosting:

  • Using an electric hand or stand mixer, cream the butter, and beat until light and fluffy (about 2 minutes) 
  • Mix in the salt, vanilla extract, cocoa powder, and chocolate syrup.
  • Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the flavored creamer in between each cup. Continue to mix for 1 minute or until creamy. Prepare a piping bag and fill the bag with frosting and frost your cupcakes.
  • Top each cupcake with one of the cut squares of candy.
