Description

Instant Pot Sweet Potato Pudding– Do you have an Instant Pot? If so, you're probably looking for recipes to make in it. This Instant Pot sweet potato pudding is a delicious and easy dessert you can make in your pressure cooker. It's perfect for Thanksgiving or any other special occasion. Best of all, it only takes about 15 minutes to cook!

Ingredients 

  • 15 ounces sweet potatoes, canned or cooked
  • 1 cup evaporated
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  • Add 1 ½ cup of water into the bottom of the Instant Pot, then add the trivet. Spray a small baking pan with cooking spray, and set aside.
  • Add your sweet potatoes to a small bowl. Using a fork, mash the sweet potatoes up. Then add the evaporated milk, brown sugar, eggs, and seasonings. Stir until the mixture is smooth.
  • Transfer the mixture to the prepared baking pan, and place it on the trivet.
  • Set the manual high pressure for 40 minutes. When the time is up, do a natural release. Then open the Instant Pot, carefully remove the baking pan, and let cool slightly. 
  • Transfer to a serving dish, and serve with whipped cream or brown sugar. 
  • Plate, serve, and enjoy!
