Air Fryer Pad Thai Chicken Egg Rolls

Description

Egg rolls are a classic appetizer, but they can be time consuming to make. With an air fryer, you can make delicious egg rolls in minutes! These Pad Thai chicken egg rolls are especially tasty.

Ingredients 

  • 2 cups chicken, shredded
  • 1/2 cup Pad Thai Sauce
  • 1 large red bell pepper, thinly sliced
  • 2 large scallions, diced
  • 12-16 large egg roll wrappers

Instructions

  • In a large mixing bowl, mix the shredded chicken and the Pad Thai Sauce
  • Use a pastry brush or your finger, wet the wrapper’s edges, and then put about 2 to 3 tablespoons of filling in the center of the egg roll wrapper. Add a couple of slices of red bell pepper and a few scallions slices.
  • Fold the egg roll by folding it, overwrapping the filling.
  • Spray the air fryer basket with cooking spray, and then place the egg rolls into the air fryer basket. Set the temperature to 350 degrees F for 5-6 minutes.
  • Plate, serve, and enjoy!
