Ingredients 

Baked Oatmeal:

  • 1 cup rolled oats
  • 1/4 cup brown sugar, or coconut sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk, any type
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Cinnamon Swirl:

  • 3 tablespoons almond butter, or regular butter
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon hot water

Topping:

  • 2 tablespoons Greek Yogurt
  • 1/8 cup pecans, diced

Instructions

  • In a medium bowl, stir together rolled oats, sugar, cinnamon, baking powder and a pinch of salt. Next, mix in milk, egg, and vanilla extract and mix until ingredients are well combined
  • Divide mixture evenly into 3 ramekins. Bake each ramekin in air fryer at 320˚F (160˚C) for 10 minutes until top is golden. Allow 5 minutes to cool before topping.
  • Make the cinnamon swirl by combining almond butter, maple syrup, cinnamon and water in a small bowl. Transfer to squeeze bottle and make a swirl on top of each baked oatmeal ramekin. Do the same with some yogurt, then top with chopped pecans.
  • Plate, serve, and enjoy!
