Ingredients

  • 1 cup unsalted butter, softened to room temperature
  • 2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 2/3 cup tablespoons granulated sugar, divided
  • 1/2 teaspoon kosher salt
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  • In a large mixing bowl, combine the butter, flour, oats, ⅔ cup sugar, salt, and vanilla extract with hands or a wooden spoon until combined and a crumbled texture.
  • Toss the cranberries with the remaining sugar in a separate bowl until evenly coated.
  • In a square baking pan, press half of the crumbled mixture into the bottom of the pan to form the crust layer. Spread the cranberries evenly across the top of the crust, and sprinkle on the remaining crumbled mixture. (Note: Depending on the size of your pan and air fryer, you may work in two batches.)
  • Set the air fryer setting to 340 degrees F and cook for 8-12 minutes, or until the cranberry bars are cooked through, and the top is lightly golden brown.
  • Allow cooling before slicing and serving.
  • Plate, serve, and enjoy!
