Description

Air Fryer Succotash -- The succotash is a dish that originated in Native American cuisine. It was traditionally made by combining corn, beans, and tomatoes. Nowadays, the dish can be found all over America and in other parts of the world. I've taken this old-fashioned recipe and modernized it with an air fryer!

Ingredients 

  • 2 pieces bacon, diced
  • 2 teaspoons olive oil
  • 1 cup corn, drained
  • 1 cup lima beans, drained
  • 2 tablespoons minced onion
  • 1/2 cup diced toamtoes, drained
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon basil, dried

Instructions

  • Mix the lima beans, tomatoes, corn, diced bacon, onions, salt, black pepper, and basil in a large bowl. Mix well.
  • Toss with olive oil, salt, black pepper, and dried basil. Mix well, coating the vegetables well. Pour into a baking dish (I used a small cast iron pan in my air fryer). Set the temperature to 380 degrees F, air fryer setting for 8 to 10 minutes. Mix the succotash frequently.
  • Plate, serve, and enjoy!
