Separate egg roll wrappers and spoon a small amount of cheesecake filling into the center of each, leaving about ½” of space around all of the edges.
Place a small dollop of strawberry pie filling on top of the cheesecake filling.
Carefully fold the bottom of the egg roll up, tuck in the two side corners, and roll the wonton up tight.
Dip your finger in a small bowl of water and wet the last corner of the wonton and use the watered edge to stick the final corner to the rest of the roll and seal it closed.
Spray the inside of the air fryer basket with cooking spray and place a single layer of the cheesecake egg rolls inside, seam side down.
Coat the egg rolls with a quick spray of cooking spray and cook for 5-7 minutes at 400 degrees Fahrenheit.
Carefully flip the rolls, add another quick coat of cooking spray, and cook for an additional 3-5 minutes.
Remove from the air fryer and sprinkle with powdered sugar.
