Ingredients 

Chicken:

  • 2 6 ounce boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Dressing:

  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic love, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Salad:

  • 1 head Romaine lettuce, chopped
  • 2 large hard-boiled eggs, sliced
  • 6 slices bacon, cooked and diced
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, cut in half
  • 1/2 red onion, thinly sliced
  • 1/4 cup blue cheese, crumbled
  • 2 tablespoon parsley, diced

Instructions

  • Preheat the air fryer to 380˚
  • Cut chicken breasts in half lengthways. Rub all sides of the chicken breasts with olive oil, salt, and pepper.
  • Place chicken breasts in a single layer in the air fryer. Air fry for 10 minutes. Flip over and air fry for an another 5-6 minutes, or until the internal temperature reaches 165°F
  • Remove the chicken breasts and allow them to rest for 5 minutes. Cut into slices.
  • Make dressing by combining all ingredients in a jar and shaking until combined.
  • Compile salad by arrange romaine lettuce, topped with hard-boiled eggs, bacon, avocado, cherry tomatoes, red onion, blue cheese, parsley and sliced chicken breast. Top with salad dressing and serve.
