Ingredients 

  • 8 ounces white or red baby potatoes
  • 4 ounces fresh green beans trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 large eggs
  • 1 cup cooked white beans
  • 1 cup cherry tomatoes, halved
  • 1/4 cup black or green olives
  • 1/4 cup Vinaigrette Salad Dressing

Instructions

  • Start by Making the Hard Boiled Eggs: Set your eggs into the air fryer. Set the temperature to 250 degrees F (air fryer setting) for 15 minutes. As soon as the air fryer is done, transfer them to an ice-cold bath. Chill for about 10-15 minutes. 
  • Making The Vegetables: In a small bowl, toss the green beans with the potatoes, olive oil, salt, and black pepper. Toss into the air fryer basket and set the temperature to 400 degrees F, air fryer setting, and cook for 10 to 12 minutes, until the potatoes are fork-tender.
  • To Assemble the Salad: Place your green beans, potatoes, hard-boiled eggs, cherry tomatoes, olives, and beans on a plate. Serve with a drizzle of vinegarette.
