Ingredients
1poundpork belly, cut into 1 inch pieces
1teaspoonsalt
1/2teaspoonblack pepper
1stalkgreen onion, diced
Spicy Ginger Sauce:
1tablespoonfresh grated ginger
2smallgarlic cloves, minced
1tablepoonsminced shallot
2smallred chili peppers, seeded and sliced
1smallmandarin orange
1/8cupmaple syrup
1/4cupsoy sauce
1teaspoonworcestershire sauce
1/2teaspoonsea salt
1teaspoonbrown sugar
2tablespoonscornstarch
1tablespoonwater
Instructions
Preheat the air fryer to 385 degrees F, air fryer setting for 5 minutes
Cut pork belly into 1 inch pieces. Add to a mixing bowl and toss with salt and pepper
Add pork belly pieces to the air fryer basket and cook for 20 minutes. Every 5 minutes, gently shake the basket to redistribute and evenly cook the pork.
Meanwhile, prepare spicy ginger sauce. Combine all ingredients in a food processor or blender and purée until smooth and pour into a medium mixing bowl. Whisk together cornstarch and water to make a slurry and add this to the mixing bowl. Whisk well, and pour sauce into a saucepan. Cook over high heat until mixture starts to boil. Once boiling, reduce heat to a simmer for 10 minutes to thicken.
Remove pork belly from the air fryer and add to a large mixing bowl. Pour the sauce over the pork belly and toss to coat. Garnish with chopped green onions.
