Air Fryer Zucchini Chips are crispy and have the perfect amount of parmesan cheese! Great as a snack, appetizer, or side dish.
Ingredients
2largeZucchini, sliced
2largeEggs
1cupAlmond Flour
1/2cupParmesan Cheese
Cooking Spray
Instructions
Start by making very thin slices of the zucchinis. You can use a Mandoline if necessary. In a small bowl whisk the eggs with a fork. In another bowl add the almond flour, the grated parmesan, mix.
Dip the zucchini into the egg wash, letting the excess off drip off.
Coat the Zucchini Chips into the almond and cheese.
Spray the basket with cooking spray, then place the chips in the basket of the air fryer without stacking them if possible. Cook at 400 ˚F, air fryer setting, for 8 to 10 minutes turning them halfway.
Repeat for the rest of the chips until they are all cooked through
