Air Fryer Low Carb Breakfast Casserole with Bacon Broccoli and Cheddar --Our family loves a good breakfast casserole. This one is perfect for making ahead of time and taking for lunch, or you can freeze the leftovers too! With bacon bits in it, we have always been guaranteed that our taste buds will be satisfied on any day when Low Carb Breakfast Casserole with Bacon comes around.

Ingredients 

  • 12 ounces  bag steamable frozen broccoli florets
  • 1 cup shredded mild cheddar cheese
  • 6 slices bacon
  • 4 large eggs
  • 1/3 cup milk
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Spray an 8x8" or another casserole dish that will fit n your air fryer with cooking spray and set aside. Place frozen broccoli in the microwave and steam according to package directions. Transfer steamed broccoli to a paper towel-lined plate to soak up excess moisture. Use a sharp knife to chop any larger pieces into bite-sized pieces. Set aside.
  • Cook bacon in a saute pan or the air fryer. Transfer cooked bacon to a paper-towel-lined plate to soak up excess grease. Crumble bacon and set aside. Add eggs, milk, and spices to a glass measuring cup or bowl. Whisk to combine.
  • Place steamed broccoli in the prepared casserole dish. Pour the egg mixture evenly over the top—layer on shredded cheese and crumbled bacon.
  • ***If making this the night before, stop here and place it in the refrigerator. Continue the next steps in the morning. 
  • Place the casserole in the preheated air fryer, and bake at 350 degrees F, air fryer setting, for 18-23 minutes or until the egg is set and the top is a light golden brown. Remove from the oven and cool for 5-10 minutes before serving.
