Description

Your mouth is watering for a good meatloaf, but you don't want to be in the kitchen all day. Our recipe has solved this problem with bacon-wrapped air fryer meatloaf!

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 cup onions, diced
  • 1/2 cup bell peppers, diced
  • 1 cup rolled oats
  • 1/2 cup breadcrumbs, seasoned
  • 2 large eggs
  • 1/4 cup BBQ Sauce
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon parsley, fresh or dried
  • 2 teaspoons sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 pound bacon, thick cut bacon
  • 4 to 5 tablespoons BBQ Sauce, , for basting

Instructions

  • Add ground beef, ground pork, onions, bell peppers, and mix well in a large bowl. Fold in the BBQ sauce, eggs, oats, breadcrumbs, Worcestershire Sauce, salt, black pepper, parsley, garlic powder, and onion powder. Mix well.
  • Place the combined meat into a small loaf pan (this will help the entire meatloaf cook up to perfection, using a larger loaf pan, usually ends with a raw center).
  • Lay the bacon on the meatloaf, and set the pan into the air fryer basket or oven. Set the temperature to 380 degrees F, air fryer setting, and cook for 30 to 50 minutes, depending on how thick your meatloaf is. Larger pans will need a longer cooking time. For best results, baste your meatloaf with BBQ sauce as it cooks up.
  • Plate, serve, adn enjoy!

Equipment

  • Air Fryer
  • Mini Loaf Pans
  • Parchment Paper, optional
