Air Fryer Eggplant Roll-Ups -- Eggplant is a great vegetable to use in recipes. It's versatile and has a more mild flavor than other vegetables, so it's easy to incorporate into dishes that usually require meat or another protein. And it cooks up fantastic in the Air Fryer!

Ingredients 

  • 2 medium eggplants
  • 1 teaspoon salt
  • 1/2 cup mozzarella cheese
  • 1 large tomato, sliced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 4 tablespoon olive oil
  • 1/2 cup tomato sauce
  • Parmesan Cheese

Instructions

  • Start by air frying your eggplant. Preheat your air fryer to 350 degrees F, air fryer setting, for 4 minutes. Then slice your eggplant into thin slices, sprinkle some salt on top of them, let them sit for 10 minutes.
  • Place them into the air fryer basket, brush the eggplant with olive oil. Air fry at 350 degrees F, air fryer setting, for 6 to 8 minutes, or until tender.
  • Remove from the air fryer, and add a slice of mozzarella, tomato slice, oregano, and basil on top. Roll up, and place into a baking pan, seam side down, and air fry for another 5 to 6 minutes at 330 degrees F, air fryer setting, until the cheese has melted.
  • Serve with tomato sauce, and Parmesan cheese.
