Description

Easy air fryer puff pastry apple tarts made with flaky store-bought pastry, cinnamon-sugar apples, and an apricot glaze. These mini apple pie tarts are ready in under 30 minutes.

Ingredients 

  • 2 sheets puff pastry, thawed
  • 2 large apples, thinly sliced
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1/2 cup apricot jam
  • 1 large egg, beaten (optional, for egg wash)

Instructions

  • Roll out the puff pastry and cut each sheet into 4 rectangles (8 total). Score a 1/2-inch border on each without cutting through.
  • Slice the apples about 1/4 inch thick and toss with the lemon juice, cinnamon, and sugar.
  • Arrange the apple slices inside the border of each pastry rectangle. If using, brush the border with beaten egg.
  • Preheat the air fryer to 400°F (200°C) for 3 to 4 minutes.
  • Place the tarts in the air fryer basket, spaced apart, and air fry at 400°F for 5 to 8 minutes, until puffed and golden brown.
  • Warm the apricot jam and brush it over the hot tarts. Serve warm.

Notes

  • For maximum puff, keep the pastry as cold as possible before cooking and always preheat the air fryer.
  • Slice apples no thinner than 1/4 inch so they don't burn.
  • Oven: Bake at 350°F for 12 to 15 minutes.
  • Upside-down variation: Place apples + honey on parchment, top with pastry, air fry, then flip.
