Air Fryer, Brown Sugar Coffee Cake

This is the perfect weekend start for any breakfast. I love it warm with a great hot cup of coffee, the sour cream in the coffee cake really makes it moist.

Ingredients

Coffee Cake:

  • 1 cup butter, room temperature
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sour cream
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

Brown Sugar Topping:

  • 1/2 cup flour
  • 3/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoon melted butter

Instructions

  1. Start by greasing your air fryer safe pan. I used melted butter, but you can use olive oil spray.

  2. In a large mixing bowl, cream together the butter and brown sugar. 

  3. Then mix in the eggs, vanilla extract, sour cream, flour, and baking powder. Mix well.

  4. Pour the cake into the prepared air fryer safe pan.

  5. Then in a small mixing bowl, mix together brown sugar topping ingredients, flour, brown sugar, ground cinnamon, and melted butter.

  6. Sprinkle the topping over the cake.

  7. Set the pan into the air fryer basket or tray, at 320 degrees F, for 12 minutes.

  8. Check the center of the cake, to make sure it's fully cooked. The actual cook time will vary from air fryer to air fryer and will depend greatly on the pan used. Try to use a pan that is not to thick. 

  9. Plate, serve and enjoy!
