Air Fryer, Beef Queso Fundido Mini Flatbreads

This is a really easy weeknight meal, you can change it out for ground chicken or ground pork, but it's easy and delicious. And it's kid-approved.

Ingredients

  • 1 pound ground beef
  • 1 Poblano pepper, diced
  • 4 mini flatbreads
  • 1 cup shredded Colby jack cheese
  • 2 tablespoons cream cheese
  • 1/3 cup half and half
  • 1/2 cup shredded mozzarella cheese
  • 1 cup salsa

Instructions

  1. In an air fryer safe pan place the ground beef and diced Poblano pepper.

  2. Place the pan in your air fryer and set the temperature to 350 degrees F, for 5 minutes, after 5 minutes, break up the ground beef with a spatula, return for another 5 minutes until all the meat is browned. *THIS IS THE AIR FRY FEATURE

  3. Once the meat mixture is done, place your flatbreads and BROIL for 2 minutes. 

  4. In a small bowl, mix together the half and half, cream cheese and shredded cheese (Colby Jack) Microwave for 30 seconds, and then another 30 seconds, until it's melted.

  5. Mix until completely melted.

  6. Spread the queso over the flatbreads

  7. Sprinkle the beef and pepper mixture over the flatbreads.

  8. Sprinkle the shredded mozzarella over the top of the beef mixture.

  9. Then spread the salsa on top of the cheese.

  10. Place back in air fryer on the BROIL feature for 2 minutes. Just until the cheese is melted.

  11. Plate, serve and enjoy!
