Air Fryer, Homemade Pumpkin Squares with Cream Cheese Frosting

This is an easy and delicious fall dessert, made in your air fryer.  They are great for the kids since you can cut them into pumpkin bars, and they are relatively healthy since they have pumpkin in them. To serve your kids and family some healthy pumpkin bars with cream cheese frosting today!

Ingredients

  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 15 ounces pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Cream Cheese Frosting:

  • 8 ounces room temperature cream cheese
  • 1/2 cup room temperature butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Optional: Serve with a dusting of ground cinnamon or pumpkin pie spice

Instructions

  1. Start by creaming together the eggs, vegetable oil and white sugar. I find if I do this step, I get a fluffier cake.

  2. Mix in the pumpkin puree.

  3. Then mix in the flour, and spices, baking powder and baking soda, and salt. Mix well.

  4. Make sure to scrape the sides, after you mix.

  5. Spray your air fryer safe pan with either olive oil spray or non-stick cooking spray.

  6. Pour your batter into the prepared pan, and then place it into the air fryer.

  7. Set the temperature to 320 degrees F, for 12 minutes. After 12 minutes, check with a toothpick (place it in the middle of the cake and see if it comes out clean) if not add another 2 minutes (Mine took 14 minutes, using the Omni)

  9. I always let my bread cool, about 10 minutes. Meanwhile, I made the icing, mix together in a large mixing bowl, the cream cheese, butter, powdered sugar, and vanilla. Mix until smooth.

  10. Then frost the cake, and serve.
